Cucumber & Almond Salad

(conforms to the elimination diet)
Serves 2

Ingredients:
1 English cucumber
½ t salt
1 pinch pepper
1 tsp honey
1 lime, juiced
¼ bunch cilantro or parsley
1 oz almonds

Method:
Slice the cucumber about ¼ inch thick. Toss with everything else but the almonds and allow to marinate for 30 minutes. Top with almonds and serve.
